COMMENTS
In an effort to reduce foodborne illness, employers should be knowledgeable about safe food practices and behaviors. All staff shall maintain healthy behaviors when working with food, including exclusion when sick and handling food properly. Ready to Eat food items shall only be handled using utensils or gloved hands and shall continue to be held at 41*F or below until sold or discarded. All hot food shall continue to be held above 135*F. During inspection, multple food handler certificates were observed. Food was observed to be in good condition and all items where packaging has been compromised shall continue to be discarded. All food must be protected and separated from any chemicals, pests, or contaminating agents, and stored above the floor. A probe thermometer and sanitizer strips are available. Any changes made to the menu, food processes, or equipment must be pre-approved by environmental health services at Pinal County. *2.2-102.12(A) Certified Food Protection Manager (C) The PERSON IN CHARGE shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. During inspection, no food manager certificates were observed but multiple food handler certificates were observed. A certified food manager should be on staff while a kitchen or food establishment is operating. Upon next inspection, documentation of a certified food manager shall be shown to the inspector.
494-602.13 Nonfood Contact Surfaces (C) NonFOOD-CONTACT SURFACES of EQUIPMENT shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Observed residue inside the ice machine above the level of the ice. Person in charge was made aware and will wipe the surface to remove any residue in a manner that will not contaminate the ice. Routine cleaning and visual checks should continue to be performed to prevent future residue or buildup.
